WHAT IS A SORBET?

A sorbet is a frozen dessert made by adding fresh fruits (but also chocolate), sugars/ sweeteners and water. Natural stabilizers are now also widely used as they help with the consistency and temperature shock.

ARE ALL YOUR SORBETS VEGAN?

Yes, all our sorbets are certified vegan.

 

ARE ALL YOUR SORBETS FAT-FREE?

Yes, they are except for our Midnight Chocolate and Double Coconut sorbets which contain naturally occurring fats.

 

ARE YOUR SORBETS GLUTEN-FREE?

Yes, our sorbets do not contain any gluten.

 

DO YOU ADD ANY DAIRY OR EGGS IN YOUR SORBETS?

No, all our sorbets are completely vegan.

 

IS YOUR CHOCOLATE DAIRY-FREE?

Yes, our chocolate sorbet is completely dairy-free. This means that our organic chocolate is certified manufactured in a facility that does not manufacture milk chocolate or other dairy based products. 

 

WHAT IS INVERT SUGAR AND WHY DO YOU USE IT?

Invert sugar is a mixture of glucose and fructose. It is naturally obtained by mixing sugar, water and an acid such as lemon juice or cream of tartar. It is very similar to honey in its structure and is about 20% sweeter than table sugar. You’ve probably made invert sugar without even knowing it when making your favorite dessert. We use invert sugar in order to add moisture and texture to our sorbets. Invert sugar is also used in pastries and other food products which require sweetness and moisture. 

You can make invert sugar yourself by following these instructions:

What you will need:

1 Lb of table sugar, 2 cups of water and 2 tsps. of lemon juice. 

What you need to do:

Bring the mix of sugar, water and lemon to a boil, heat up the mixture to 237 F and cool it down at room temperature

You can now put your homemade invert sugar in a sealed jar (a mason jar for example) and into your fridge. You will have at least 12 months to use it. 

 

WHAT IS CAROB GUM (aka LOCUST BEAN GUM) AND WHY DO YOU USE IT?

Carob gum is naturally derived from the seeds of the carob tree which is found in the Mediterranean region in countries such as Spain, Italy, Portugal and Greece. We use Carob Gum in very low quantities (less than 3% depending on the flavor) in order to texturize our sorbets.

 

WHAT IS ORGANIC TAPIOCA SYRUP AND WHY DO YOU USE IT?

Tapioca syrup is a natural liquid sweetener produced from organic tapioca starch via enzymatic hydrolysis. Tapioca is a starch which is extracted from manioc, also referred to as the Brazilian arrowroot. We use tapioca syrup to prevent sugar from forming crystals and thus will give you a better mouth feel when enjoying our sorbets.
